Memphis Dry Rub
As recommended (and provided) by Dan Kugler of Arborque. Enough rub for 6 racks, 5 shoulders or 10 lbs of chicken. From Gibson, page 186.

Ingredients
- 3/4 cup brown sugar
- 3/4 cup paprika 1/4c smoked. 1/2c spanish
- 1/4 cup black pepper
- 1/4 cup garlic powder
- 3 tbsp kosher salt
- 1 tbsp chili powder
- 2 tsp onion powder
- 2 tsp cayenne
- 2 tsp cumin
- 2 tsp oregano
- 2 tsp sage
- 2 tsp marjoram
- 2 tsp dried parsley
- 1 tsp white pepper
- 1 tsp celery seed
Optional Additions
- 1 tsp chipotle
- 1/2 tsp find ground coffee
Instructions
- Break up chunks of brown sugar while mixing all ingredients together. Keeps indefinitely.
